I think it would be easier to read if the fuel economy readout averaged maybe the last couple seconds of data rather than being instantaneous, maybe it could be an option to choose from. Its cool to have it there but when you are trying to work out what you're doing economy wise its just a bit erratic the way it currently is.

Once you get the injector size setting correctly it should be quite accurate.

That's actually a very good idea. I know the instantaneous readout can be all over the place even with very small throttle changes. Maybe an average for the last couple of seconds would be better. Or even let users customise it.
I'll look into it.
